Dailuaine Distillery, located in the village of Carron in Speyside, was founded in 1851 by William Mackenzie. It produces whisky with a bold and robust character with hints of oak, fruitcake, vanilla and spice.
Dailuaine employs a rapid distillation process and, only until recently, used stainless steel shell-and-tube condensers instead of copper, enhancing the spirit's weighty character and layered complexity. While most of its whisky is destined for premium blends, Dailuaine’s single malts and independent bottlings have earned it a dedicated following in recent years.
Dailuaine Distillery was the first in Scotland to be fitted with the iconic pagoda-style roof, designed by famed distillery architect Charles Doig in the late 19th century.
This innovation improved ventilation in the malting process and soon became a hallmark of Scottish distilleries, symbolising traditional whisky-making.
